For large high schools, finding ways to increase dining participation by even a few percentage points can positively impact the operations budget. This past year, Lake Brantley High School (Altamonte Springs, Seminole County, Florida) completed its campus restaurant renovation for the school of more than 2,600 students. Since then it has seen an 8% year-over-year increase in dining patronage. Now, 50% of the student, faculty and staff population dines at Patriot’s Pointe, which comes to over 1,300 meals a day.
The renovation focused on updating the dining, serving and food prep areas and featured five independently branded serving concepts:
- 3.14 Pizzeria – Italian style pasta and pizza
- Mexology – Build-your-own Mexican burrito bowl
- Yin Yang – Asian cuisine
- The Roost – Chicken concept
- Filtered – Café-style coffee shop
The design, themed around the five “micro restaurants”, was chosen to give the facility a more high-end, collegiate-style dining hall, which would also provide serving efficiency for the high number of guests.
Two years of planning led to construction, which was completed in just four months. Participating in the project were the foodservice consultant group (LGM Design), Seminole County’s food service program management group (Red Apple Dining) and the foodservice manufacturing rep (Eaton Marketing). The renovation included custom serving counters, complete with drop-ins and serving technologies, all of which were manufactured by LTI. According to Eaton Marketing’s Kevin Dillon, LTI’s counters were instrumental in providing solutions that offered a one-point connection and the seamless and high-end look the school was hoping to accomplish.
“In creating this environment, we really wanted to focus on developing efficiency through design,” said Dillon. “This project was not a standard modular design. LTI offered exceptional solutions to the custom requirements of every counter per the consultant’s design.”
The success of the renovation has been immediately realized. Since the completion of the project in 2019, the school has seen its a la carte serving sales increase 250%, in addition to the 8% increase in dining.
